Ingredients: For the salad:

  • 1 avocado
  • 2 cups arugula
  • 1 cucumber, diced
  • 1 tomato, diced
  • 10g crumbled feta cheese

For the dressing:

  • ½ avocado
  • Olive oil
  • 8 sprigs of cilantro
  • 10 sprigs of parsley
  • Salt and white pepper
  • Juice of 1 lemon
  • 1 clove of garlic, sliced

Directions

Let's start with the dressing. In a small saucepan, combine olive oil and sliced garlic. Once heated, remove from heat and let it cool. Strain the mixture. Finely chop the cilantro and parsley, and mash the avocado in a bowl or mortar. Add the strained olive oil, cilantro, parsley, lemon juice, salt, and pepper to the mashed avocado. Mix well and add more olive oil if needed.

In a salad bowl, finely chop the tomato, cucumber, feta cheese, and the remaining half of the avocado. Place them on top of the arugula leaves. Pour the dressing over the salad.
