A beloved summer salad that showcases the tender and sweet green beans as a star on the table, whether as a standalone salad or as a side to accompany a fish dish.
Our ingredients:
300 grams green beans
40 grams lemon juice
Zest from one lemon
100 grams olive oil
3 cloves of garlic, finely chopped
3 mint leaves
Salt and pepper
Clean and wash the green beans. Then, blanch them in boiling water with a pinch of salt for 10 minutes (depending on their hardness). Using tongs, transfer the beans to cold water. Let them cool down, then strain them.
In a bowl, whisk together the olive oil and lemon juice. Add salt, freshly ground pepper, finely chopped garlic, and finely chopped mint. Pour the dressing over the salad, mix gently, and serve.
