It's easy, tasty, healthy, and refreshing, making it a versatile dish that can be enjoyed on its own or paired with other ingredients such as cold cuts, chicken, or even fish.

Ingredients:
• ½ cup black-eyed beans
• 1 large onion, finely chopped
• 3-4 fresh spring onions, finely chopped
• 1 cup parsley, finely chopped
• ½ cup olive oil
• Juice from one juicy lemon (optional)
• Salt, pepper, and oregano

Directions

Instructions:
1. Soak the black-eyed beans overnight.
2. In the morning, rinse the beans and simmer them gently until they soften, but not to the point of becoming mushy.
3. While the beans are simmering, prepare the rest of your ingredients.
4. Once the beans are cooked, drain them, rinse them with cold water, and let them cool.
5. Transfer the cooled beans to a mixing bowl.
6. Add the chopped onion, spring onions, and parsley to the beans.
7. Drizzle olive oil over the mixture and add lemon juice if desired.
8. Season the salad with salt, pepper, and oregano to taste.
9. Gently toss all the ingredients together, being careful not to mash the beans.
10. Refrigerate the salad for 1-2 hours to allow the flavors and aromas to meld.
11. Serve the bean salad chilled and enjoy!
