What can I say about this salad? It's simply irresistible. I usually remember it on Clean Monday, but today, I decided to share it with you. Give it a try, and I'm looking forward to hearing your opinion!
Our ingredients:
1 fillet of smoked herring, finely chopped
180g black-eyed beans (soaked in water overnight)
2 fresh onions, finely chopped
½ dry onion, finely chopped
1 smoked red bell pepper
½ bunch of parsley, finely chopped
5 sun-dried tomato fillets, finely chopped
60g grelia olive oil
25g lemon juice
Zest of half a lemon
1 tsp dill
Salt and pepper
We have soaked the black-eyed beans in water overnight.
In a small saucepan, we boil the beans for 20 minutes.
We drain and place them in a bowl.
In the bowl with the beans, we add the smoked herring, smoked bell pepper, fresh and dry onions, parsley, sun-dried tomatoes, and dill. We mix lightly.
Then, in a separate bowl, we whisk together the lemon juice, grelia olive oil, salt, pepper, and lemon zest. We pour the dressing over the salad and mix well. We let it sit in the refrigerator for about 1 hour to allow the flavors to blend.
Serve it accompanied by... ouzo! It's a perfect match!
