Ingredients:

  • Boiled potatoes
  • Boiled eggs
  • Boiled zucchini
  • Boiled carrots
  • Boiled beets
  • Boiled broccoli
  • Boiled cauliflower
  • Boiled green beans
  • Assorted greens
  • Olive fillets
  • Capers
  • ½ tsp olive oil
  • Juice of one juicy lemon
  • ½ tsp oregano
  • Coarse salt
  • Freshly ground pepper

Directions

  1. Boil the vegetables. Note: Boil the potatoes with their skin on to avoid excess water absorption.
  2. Test the vegetables for doneness using a toothpick. They should be tender.
  3. Spread the greens in a bowl and arrange the boiled vegetables and eggs on top.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, pepper, and oregano.
  5. Pour the dressing over the vegetables.

Optional: If desired, add a tablespoon of mild mustard to the dressing for extra flavor.
