Cobb Salad

A colorful salad that provides all the nutrients one could ask for in a single dish. Wonderful, full of flavors and colors, perfect for a Sunday brunch, a festive dinner or just a hearty, healthy and tasty meal that can be enjoyed by various dietary groups and not only.

Ingredients:

  • 1/2 head of lettuce, finely chopped
  • 5 mushrooms, diced small
  • 1 carrot, grated
  • 1/2 cucumber, diced small
  • 1 tomato, diced small
  • 1/2 cup boiled corn
  • 1/2 cup chopped walnuts or pecans
  • 1 cup cooked black beans
  • 1 cup cooked bulgur wheat

For the dressing:

  • 40g apple cider vinegar
  • 2 tbsp lemon juice
  • 1 tsp spicy mustard
  • 100g olive oil
  • Salt and pepper to taste

Directions

In a pan with a little olive oil, lightly saute the mushrooms. In a salad bowl, place the lettuce on the bottom and the remaining ingredients on top in stripes.

In a clean bowl, mix the mustard, lemon, and apple cider vinegar with a whisk. Slowly add the olive oil while stirring vigorously until the dressing thickens. Add salt and pepper to taste. If the dressing is too thick, you can thin it with a little water.

Drizzle the salad with the dressing and serve immediately. Enjoy!
