What can I say about this wonderful salad? Should I mention how nutritious it is? Should I talk about its deliciousness? It resembles a multi-seed salad, primarily featuring legumes, but here it's enriched with vegetables, making it a complete meal on its own. I think I don't need to say much about this unique favorite salad of mine. Once you try it, I'm sure you'll love it, and it will become one of your favorites too.
Our ingredients:
100 grams black beans, boiled
100 grams medium-sized beans, boiled
100 grams red beans, boiled
2 boiled zucchinis
1 finely chopped red bell pepper
1 finely chopped yellow bell pepper
1 finely chopped onion
2 fresh green onions, finely chopped
1 tablespoon olive fillets
4 mushrooms, sliced
2 cloves of garlic, finely chopped
Salt, pepper, oregano
Lemon juice
Olive oil
We soak the legumes in water overnight. The next day, we boil them and drain them. We also boil the zucchinis simultaneously. In a bowl, we combine all the legumes with the vegetables. In a pan, we lightly saute the mushrooms and zucchinis after slicing them. Just before finishing, we add garlic, salt, freshly ground pepper, lemon juice, and oregano to infuse the vegetables with their flavors. We pour the dressing over our salad and gently mix it.
