Ingredients:
1 cup cooked quinoa

1 eggplant, sliced, roasted, and diced

1 avocado, diced

100g cooked red beans

2 fresh spring onions, chopped

1 small onion, finely chopped

1 clove garlic, finely chopped

1/2 cup chopped cilantro

1/2 red bell pepper, finely chopped

1/4 cup olive oil

Juice from one juicy lemon

Salt, pepper, oregano

1/4 tsp cumin

Directions

Mix the ingredients together with the spices. Let it sit in the refrigerator for an hour to allow the flavors and aromas to blend together. Enjoy!
