A wonderful salad, energizing, hearty, and highly nutritious. The deliciousness of legumes combined with the crunchiness of zucchini and carrots blends perfectly with the dressing, which sits on top of the rustic bread, adding a delightful flavor. You can easily serve it as an appetizer or enjoy it as a main meal, as it is nutritionally complete.
Our Ingredients:
1 pack multigrain legumes
1 carrot, thinly sliced
1 zucchini, thinly sliced
100g chickpea sprouts
1 onion, thinly sliced
2 eggs 2 broken rusks
100g olive oil
2 tbsp vinegar
1 tbsp lemon juice and a little zest
2 tbsp finely chopped parsley
2 cloves of garlic
½ tsp salt
½ tsp pepper
We boil the multigrain legumes according to the instructions. We drain the legumes into a bowl. We add the onion, carrot, zucchini, and chickpea sprouts. We mix well. In a blender, we combine olive oil, garlic, vinegar, lemon juice, parsley, salt, and pepper, blending until the dressing becomes homogeneous. We pour the dressing over the salad, mix well, and refrigerate for half an hour to let the flavors blend. Serve with a boiled egg.
