Our Ingredients:
•    250g cooked black beans
•    2 tomatoes, diced
•    2 carrots, finely chopped
•    3 anchovies

•    1 green onion, finely chopped
•    ½ bunch of dill, finely chopped
•    Juice of half a lemon
•    80g olive oil
•    Salt and freshly ground pepper

Directions

Boil the black beans for about 40 minutes until they become tender (be careful not to overcook them).
In a bowl, combine the black beans, green onion, carrots, and diced tomatoes. In a blender, mix the olive oil, lemon juice the anchovies
 , salt, and pepper to create the dressing. Pour the dressing over the bowl with the beans and vegetables, add the dill, and mix well. Serve with a sprinkle of dill on top and freshly ground pepper.
You can also add boiled potatoes, diced avocado, or olive slices to enhance the flavor. It pairs beautifully with these additions!
