A tasty, healthy, and refreshing choice. This salad is perfect for the summer and accompanies our dishes with its cool yogurt sauce, providing a delightful burst of flavor. Our ingredients:
200g zucchini
½ tsp coarse salt
A handful of pine nuts, walnuts, sunflower seeds, and Aegina pistachios
For the yogurt sauce:
200g yogurt
1 tbsp lemon juice
3 tbsp olive oil
1 clove of minced garlic
? cup finely chopped dill
Salt and pepper
We take our zucchini and wash them well. We trim off both ends and, using a peeler or mandoline slicer, create thin ribbons of zucchini. We place them in a colander, sprinkle them with coarse salt, and let them sit for about 15 minutes.
In a bowl, we mix all the ingredients for our yogurt sauce.
On a serving platter, we arrange the zucchini ribbons and drizzle them with the sauce. We sprinkle them with the mixed nuts.
If desired, we can also add crumbled feta cheese.
