The basic recipe for a smooth and delicious mayonnaise.
2 egg yolks
250g sunflower oil
1 tsp white vinegar
1 tsp lemon juice
1 tsp mustard
a pinch of salt
a pinch of white pepper
a little water
In a bowl, combine the egg yolks, vinegar, lemon juice, and mustard. Whisk them together vigorously using an immersion blender, and gradually add the sunflower oil in a steady stream until the mixture thickens.
Finally, season with salt and white pepper and adjust the taste according to your preference.
Fasting Mayonnaise:
If you want to make fasting mayonnaise, replace the eggs with soy milk. Follow the same process.
