Tabbouleh with Cauliflower

1 medium cauliflower

1 cucumber, finely diced (without the seeds)

2 large tomatoes, finely diced (without the seeds)

1 bunch of parsley, finely chopped

Lemon zest

2-3 fresh onions, finely chopped

? bunch of mint, finely chopped

? cup of olive oil

Salt and pepper

Directions

Thoroughly wash the cauliflower and cut it into florets. Using a grater, grate all the florets, starting from the side with the larger opening.

Next, add all the remaining ingredients to the grated cauliflower. Mix well and refrigerate to allow the flavors to blend and the aromas to meld.
