A simple and healthy dish that combines various wild greens with goat cheese and sauteed chanterelles. The mushroom sauce with garlic, olive oil, lemon, and salt adds a light and aromatic character to the dish. Finally, the pepper adds a touch of spicy flavor.
Ingredients:
1 kg wild greens
250 g goat cheese
200 g chanterelles
2 cloves of garlic
Olive oil
Lemon juice and zest
Salt – pepper
Instructions: After carefully cleaning and washing our greens, we boil them, being careful not to leave them for too long and make them too soft. It's good to keep them a little firm. In a pan, we saute the garlic slightly in a little olive oil to give the oil a flavor, and then we saute the chanterelles lightly. We remove the pan from the heat and add the olive oil, salt, and lemon with zest, enough to have a balanced flavor. In a plate, we place our greens with the goat cheese and pour the mushroom sauce on top. To finish, we sprinkle plenty of freshly ground pepper.
