 Zucchini with Garlic Mushroom Dressing The most delicious salad in its lightest version. Zucchinis that will be boiled and mushrooms that will be lightly sauteed with garlic, drizzling over the zucchinis... Many flavors in one recipe... Follow it. Easy, quick, healthy, and very tasty!


Our ingredients:
½ cup button mushrooms
5-6 zucchinis
3 cloves of garlic, finely chopped
½ tsp thyme
½ tsp oregano
½ tsp rosemary
Zest and juice of one juicy lemon
? cup olive oil
Coarse salt
Freshly ground pepper

Directions

Wash the zucchinis. Boil them in a saucepan until they are tender (check with a toothpick).
While we wait for the zucchinis, let's prepare the rest. Gently pat dry the mushrooms with a clean towel, then cut them into quarters.
In a frying pan, add a small amount of olive oil along with the thyme and oregano. Immediately add the mushrooms and saute until they take on color. Once they are nicely browned, add the chopped garlic and mix lightly.
Remove from heat, being careful not to burn the garlic and make the oil bitter.
Once the zucchinis are ready, slice them and add the mushrooms.
Pour in the lemon zest, lemon juice, rosemary, and season with salt and pepper. Gently toss everything together and drizzle the dressing over the salad.
Serve it warm or cold.
