Ingredients:

  • 1 large broccoli, florets and stem cleaned and chopped
  • 1 potato, diced
  • 1 leek, thinly sliced
  • 1 clove of garlic, finely chopped
  • 3 tablespoons of olive oil
  • 1 liter of vegetable broth
  • Salt and nutmeg to taste

Directions

In a pot, heat the olive oil and add the leek. Saute lightly and then add the garlic and broccoli. Add the vegetable broth, salt, and cover the pot to simmer for about 15 minutes. Then, using an immersion blender, puree the soup until smooth. Add some warm water to achieve the desired consistency. Personally, I prefer my veloute quite thick, as it is a comforting soup. Serve with a sprinkle of nutmeg.

  • You can add crispy bacon or prosciutto at the end.
  • If you like, you can add some cream.
  • It pairs perfectly with spicy cheese, smoked cheese, or even blue cheese.
