A very tasty, easy, and unique variation of our beloved chickpeas. We often try them with tomato or lemon. I have an alternative suggestion for you, with leeks. In the end, the leeks melt and leave their sweetness, making the chickpeas a wonderful and unforgettable dish that I promise you won't eat any other way. A purely wintery dish that you will love.
Our ingredients:
350g chickpeas soaked from the previous day
200g leeks, thinly sliced
½ bunch of dill
2 carrots, sliced into rounds
Juice of one juicy lemon
Olive oil
Salt and pepper
We soak the chickpeas from the previous day. We finely chop the leeks into thin slices. In a wide saucepan, we saute the leeks until they wilt. Then, we add the chickpeas and carrots to the pan. We cover the saucepan and let it simmer for 1 hour, occasionally stirring. When they are almost ready, we add salt, pepper, lemon juice, and dill. We let it simmer for 5-10 minutes, taste for seasoning, and serve.
