Ingredients:
500g goat meat, cut into pieces
2 onions, finely chopped
2 carrots, finely chopped
2 potatoes, finely chopped
2 celery stalks, finely chopped
3 garlic cloves, finely chopped
1 tbsp olive oil
1 tsp vinegar
Salt and pepper
Water
Carefully wash the pieces of goat meat and remove any bones or excess fat.
In a large pot, heat the olive oil over medium heat and saute the onions and garlic until softened.
Add the goat meat to the pot and saute for a few minutes until it takes on some color.
Pour the vinegar over the goat meat and mix well.
Add the finely chopped carrots, potatoes, celery, salt, and pepper to the pot. Stir all the ingredients together.
Add enough water to cover the ingredients and let it come to a boil.
Reduce the heat to low, cover the pot, and let the soup simmer for about 1-2 hours, or until the goat meat is tender.
Stir the soup occasionally during cooking and add more water if needed, depending on the desired thickness.
Once the goat meat is tender and the soup has developed its flavors, remove it from the heat.
Allow the soup to cool for a few minutes before serving.
Serve the goat soup hot, drizzling a little olive oil and freshly ground pepper on top if desired.
