Lentil Soup with Village Sausage

Lentil soup with village sausage is a spicy variation of the traditional lentil soup. Our Ingredients:

300g lentils

4 village sausages, sliced

2 cloves of garlic, thinly sliced

2 carrots, thinly sliced

2 ripe tomatoes, grated or crushed

1 hot chili pepper

2 bay leaves

1 tsp ground cumin

1 tsp smoked paprika

1 tsp white vinegar A pinch of thyme Salt and pepper

½ cup olive oil

Directions

After cleaning the lentils and removing any foreign objects (stones, wheat, etc.), rinse them well. Boil them in plenty of water for 3 minutes, then drain them.

In a pot, heat a little olive oil and saute the sausage for 5 minutes, then add the garlic and saute for another 2-3 minutes. Add the chili pepper, carrots, and lightly saute them. Stir in the tomatoes, bay leaves, cumin, lentils, and enough boiling water to cover the ingredients well.

Simmer with the lid on for half an hour. After half an hour, remove the lid and let it boil until the lentils are tender.

Just before turning off the heat, add thyme, salt, pepper, olive oil, and vinegar. Stir gently and let it rest for 10 minutes before serving.
