Our Ingredients:
4 medium-sized organic potatoes, cleaned and diced
1 liter of homemade vegetable broth
1 leek (white part only)
2 cloves of garlic
200g plant-based milk
2-3 tbsp finely ground almonds (optional)
Olive oil Salt, white pepper, smoked paprika, thyme
Various lightly sauteed vegetables for serving.
In a pot, heat olive oil and saute the leek, followed by the garlic. Add the diced potatoes, vegetable broth, salt, pepper, and a touch of thyme. Cover the pot and let it simmer for about 20 minutes. While it simmers, finely chop a selection of vegetables and lightly saute them. Then, remove the pot from the heat and blend the soup with an immersion blender until smooth. Stir in the plant-based milk and the ground almonds. Adjust the consistency by adding more broth if desired. Serve the soup garnished with the sauteed vegetables, a sprinkle of thyme, and a touch of smoked paprika.
