A delicious and flavorful soup, a favorite dish of the Italians. There is no specific recipe for minestrone as it was traditionally made with whatever vegetables or legumes were available at home, complemented with small pasta or other types of noodles.
It is highly nutritious, and housewives used to make it because they could utilize any quantity of vegetables they had on hand. It was often served with croutons or bits of cheese.
Here, we will see the most common version of minestrone soup, and of course, the easiest one to make.
Here are our ingredients:
In a pot, heat the olive oil and saute the onion. Add the tomato juice, let it come to a boil, and then add the vegetables and the broth. Simmer for about 15 minutes, and then add the pasta. Simmer until the pasta is cooked.
Serve the minestrone soup hot, garnished with fresh basil.
