Our Ingredients:

500g mixed grains (beans, black-eyed peas, lentils, chickpeas, fava beans, wheat, etc.)

2 dry onions, finely chopped

2 ripe tomatoes, crushed

2 carrots, sliced

2 cloves of garlic, finely chopped

1 tbsp tomato paste

1 celery stalk, finely chopped

2 hot peppers

1 cup olive oil

Salt - Pepper - Oregano

Directions

From the previous day, soak our mixed grains (they need at least 12 hours). Drain and rinse them well. In a saucepan, saute the onion and then the garlic with the tomato paste, then add the tomatoes and celery. Then add our mixed grains and let them simmer for 40 minutes. After 40 minutes, add the carrots and let them simmer for another 20 minutes. Once the 20 minutes have passed, add salt, pepper, oregano, and the remaining olive oil, and let it boil for another round. Serve hot.

Note: We can omit sauteing the onion and garlic with the tomato paste if we prefer and simply let them boil from the beginning with our mixed grains, for a lighter flavor.
