Mushroom soup with various mushrooms

Enjoy this warm and nourishing mushroom soup, perfect for chilly days. The taste of fresh mushrooms harmoniously blends with the light and delightful texture, creating a dish full of flavors and aromas. Bon appetit!

Ingredients:

  • 500 g mixed mushrooms (agaricus, portobello, trumpet, oyster, porcini)
  • 1 large onion, finely chopped
  • 2 tbsp soy sauce
  • ½ cup fresh dill, finely chopped
  • ½ cup Carolina rice
  • ? cup olive oil
  • 1 ½ L vegetable or beef broth
  • Olive oil
  • Salt and pepper

Directions

  1. Finely chop the mushrooms and saute them in a saucepan. Then, add the onion.
  2. Add your preferred broth, soy sauce, porcini water, and porcini mushrooms. Once it starts boiling, add the rice and dill.
  3. Let it simmer and adjust the taste with salt. Serve with freshly ground pepper.

Notes:

  • If fasting, saute the mushrooms without oil, as they will release their own liquid.
  • For vegan and vegetarian groups, use only vegetable broth or water.
  • You can substitute rice with noodles and add a bit of ginger.
  • It's great to add fresh green onions or finely chopped leeks.
  • The more variety of mushrooms you use, the more intense the flavor of your soup will be.
