Ingredients:

  • 3 medium-sized organic potatoes, cleaned and cut into cubes
  • 1 leek, sliced (white part only)
  • 1 finely chopped onion
  • 1 clove of garlic
  • 40g of olive oil
  • 50g of butter
  • 150g of finely chopped bacon
  • 1 ½ liters of vegetable broth
  • 100g of strained yogurt
  • Salt, white pepper, thyme, and smoked paprika

Directions

Start by setting aside 2-3 bacon slices for garnish. In a saucepan, add the olive oil and saute the remaining bacon with the leek, onion, and garlic. Then, add the potatoes, season with salt, pepper, and a pinch of thyme, and pour in the vegetable broth. Reduce the heat and let it simmer until the potatoes become tender. Next, remove the saucepan from the heat and use an immersion blender to puree the soup. Add the strained yogurt, butter, and season with salt and pepper to taste. Stir well to combine.
