Our Ingredients:
1 eggplant, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 carrot, diced
1 dried onion, diced
2-3 small zucchinis or
1 large zucchini, diced
2-3 mushrooms, diced
2-3 fresh onions, diced
1 leek (white part only), diced
1 potato, diced
1 celery stalk, thinly sliced
1 tomato (peeled and deseeded), diced
4 eggs
3 sausages, sliced or smoked pork from Mani
½ cup olive oil
Salt and freshly ground pepper
½ cup rice or barley
In a pot, heat a little olive oil and saute the fresh onion, dried onion, and leek. Continue by adding the remaining ingredients, including the sausage, and mix lightly. Fill the pot with water and let it simmer for 10 minutes. After 10 minutes, add the rice or barley and let it simmer. Check the liquid levels and add water if needed. Just before turning off the heat, add the eggs (crack them into the boiling soup without stirring), salt, pepper, and the remaining olive oil. Cover the pot and let it simmer for one last boil. Turn off the heat and let it rest for 5 minutes.
Serve hot. You can optionally add croutons or sauteed bacon bits on top.
