Our Ingredients:
½ kg dried lentils
2 cloves of garlic, minced
2 carrots, thinly sliced
2 ripe tomatoes, grated or canned tomatoes
2 bay leaves
2 tbsp vinegar
A pinch of oregano
Salt and pepper
½ cup olive oil
After cleaning the lentils and discarding any foreign objects (stones, grains, etc.), rinse them thoroughly. Boil them in plenty of water for 3 minutes, then drain.
In a saucepan, heat a little olive oil and saute the onion for 2-3 minutes. Add the minced garlic and carrots, and saute them lightly. Add the tomatoes, bay leaves, lentils, and enough boiling water to fully cover the ingredients.
Simmer gently with the lid closed for half an hour. After half an hour, open the lid and let it simmer until the lentils become tender and creamy.
Just before turning off the heat, add the oregano, salt, pepper, olive oil, and vinegar. Stir lightly and let it sit for 10 minutes before serving.
In addition to the traditional version, you can also try creamy lentil soup. It offers a velvety taste and can be combined with meat or fish for a delightful variation.
