Ingredients:
1 green pepper, diced small
1 red pepper, diced small
1 carrot, diced small
1 dry onion, diced small
2-3 small zucchinis or 1 large, diced small
2-3 mushrooms, diced small
1 leek (only the white part), diced small
1 potato, diced
a few florets of broccoli
a few florets of cauliflower
2 celery stalks
1 tomato (blanched, peeled, and seeded), diced small
olive oil
salt, freshly ground pepper
Instructions: Put all the vegetables in a pot and boil them well. Check that the water is about equal to the vegetables. Once they are boiled, add salt, pepper, and olive oil, and puree the vegetables with a hand blender. Serve with croutons or a spoonful of yogurt.
