I love this soup so much! It's easy, quick, delicious, and perfect for the winter months! There are many variations and we can add various flavors like sage, coriander, fennel, cardamom, or even ingredients like coconut milk, almond milk, or Parmesan cheese. Depending on the wine notes we want to emphasize, it will give our soup a unique twist.
Our Ingredients:
In a pot, melt some butter and saute the leek, onion, ginger, and potato. Then add the butternut squash and deglaze with white wine. Add the vegetable broth and water. Let it come to a boil. Once it boils, season with salt and pepper and blend it with a blender until smooth.
For serving, garnish with toasted pumpkin seeds and croutons if desired.
