Ingredients:

½ kilogram of dried lentils

2 cloves of garlic, sliced

2 carrots, thinly sliced

1 large potato, cut into large cubes

1 ripe tomato or

½ can of crushed tomatoes

2 bay leaves

1 tsp smoked paprika Salt and pepper to taste

½ cup of olive oil

Directions

  1. Clean the lentils by removing any foreign objects (stones, debris, etc.) and rinse them thoroughly. Boil them for 3 minutes in plenty of water, then drain.
  2. In a large pot, heat a little olive oil and saute the garlic for 2-3 minutes. Add the carrots, potato, and saute them lightly.
  3. Add the tomato, bay leaves, lentils, and enough water to cover the ingredients well.
  4. Simmer with the lid closed for half an hour. After half an hour, remove the lid and let it simmer until the lentils are tender and cooked.
  5. Once the lentils are cooked, add the olive oil, smoked paprika, salt, and pepper.
  6. Use an immersion blender to puree the lentils until smooth. Serve hot.
  7. This dish can be served as a side dish with meat or fish.
