Our ingredients:

500g mixed mushrooms

20g dried porcini mushrooms soaked in water

½ cup shitake mushrooms

1 cup orzo or risoni pasta

1 finely chopped onion

3 cloves of garlic, finely chopped

½ bunch of dill, finely chopped

150g tahini

2 tsp fresh thyme

1 bay leaf

Juice of 2 juicy lemons

Zest of 1 lemon

Salt and pepper

Directions

In a pot with a little water, saute the mushrooms, onion, and garlic. Then add the porcini mushrooms with their soaking water, thyme, bay leaf, and 1.2 liters of water. Add the orzo pasta and let the soup simmer.

In a bowl, whisk together the tahini and lemon juice until creamy. Using a ladle, take some broth from the soup and slowly pour it into the bowl, continuously stirring (similar to making an egg-lemon sauce). Then pour the tahini mixture into the pot with the mushrooms and stir to incorporate.

Add the dill and lemon zest. Serve and enjoy!
