A wonderful recipe, a traditional Greek dish that is delicious and can be served as a main course or a tasty appetizer with a glass of wine. From Prespes, with its exceptional beans, this dish is made with great love!

But how do we choose the right giant beans? Well, by biting them! When we go to buy them, we bite one bean. If the bean holds its firmness and is hard but with a "body," then it is the right bean! If it crumbles and falls apart, it means it is dehydrated and has been sitting for a long time, and it won''t cook properly.

Now, there are many variations for cooking giant beans. Some saute the vegetables before baking them to enhance the flavors, making the dish heavier. Others directly place the vegetables in the oven. Some use a lot of tomatoes, while others skip the vegetables altogether. However you make them, they will surely be an amazing traditional and delicious dish!

Here we will see the lighter version of baked giant beans.

First, we soak the beans overnight. They need at least 12 hours to absorb water.

Our ingredients are as follows:

  • 500g giant beans
  • 3 ripe tomatoes, grated
  • 2 carrots, thinly sliced
  • 2 celery stalks, finely chopped (veins removed)
  • 3 cloves of garlic, thinly sliced
  • 2 large onions, thinly sliced
  • ½ bunch fresh spring onions, finely chopped
  • A little parsley
  • Salt, pepper, paprika, olive oil

Directions

We boil the giant beans over low heat for about an hour. While the beans are boiling, we prepare our ingredients: finely chop the onions, garlic, spring onions, and parsley. We grate the tomatoes and prepare the celery and carrots. Preheat the oven to 180°C.

When the giant beans are almost ready, we open the oven and place them in a baking dish. Then we pour in the prepared ingredients and mix everything together. We drizzle generously with olive oil as they need it.

We add a little water to the dish and place it in the oven. We bake the dish for about an hour and fifteen minutes, being careful not to let the liquids dry out. In the last quarter, you can switch to the grill function to give them a caramelized color, but keep an eye on them so they don''t burn!

It''s an ideal combination with a piece of Greek feta cheese drizzled with good local olive oil and oregano, a glass of wine, and a slice of homemade bread! Enjoy your meal!

*You can add half a tablespoon of tomato paste if desired. It will make the giant beans redder. **If you want to make a sauce, you can prepare it separately in a saucepan (simmering) and then combine it with the beans in the baking dish.
