Broad beans, also known as "koukia" or "kyamos" in ancient Greek, are an excellent legume known for their delicious and sweet taste, as well as their nutritional value. Ingredients:

  • 8 artichokes (refer to the cleaning process here) (also mentioned in the recipe for artichokes with fava beans)
  • 500-600g fresh and cleaned broad beans, without the outer skin (or soaked overnight if using dried beans)
  • ½ bunch of fresh spring onions
  • 4-5 blossoming onions with their bulbs (optional)
  • 1 bunch of finely chopped dill
  • 1 dry onion, finely chopped
  • Juice of a juicy lemon
  • Salt and pepper
  • Olive oil

Directions

  1. Begin with the artichokes. Clean them and place them in water with lemon and salt to prevent discoloration.
  2. Clean the broad beans by removing the outer skin. Chop the spring onions (and fava beans if using) and saute them in a deep pot along with the broad beans.
  3. Cut the artichokes into quarters if they are large, or in half if medium-sized, and add them to the pot. Add enough warm water to cover the ingredients, salt, and pepper. Allow it to simmer for approximately 30 minutes.
  4. Then, add the chopped dill and lemon juice. Leave the pot uncovered and continue cooking for another 10 minutes.
  5. Serve with freshly ground pepper and dill.

Notes:

  • The blossoming onions are the fresh onions that have developed a bulb on top. They produce a sweet and flavorful juice. If added to the dish, it sweetens and enhances the flavor.
  • If desired, you can also add small potatoes and carrots to the dish.
