Our Ingredients:
In a pot, boil the chickpeas for 10 minutes, skimming off any foam that forms. Strain the chickpeas and rinse the pot. Add a little olive oil to the pot and saute the onions, followed by the garlic and carrots. Add the chickpeas and saute everything together. In a casserole dish, place our ingredients and add hot water until they are covered, plus an additional finger's height. Add the herbs and spices, and pour the remaining olive oil on top. Cover the casserole dish and bake the revithada at 180°C (356°F) for 1 hour. After an hour, uncover the dish and reduce the temperature to 160°C (320°F), allowing it to cook until it takes on a golden color and thickens. Enjoy your meal!
