Chickpeas with vegetables in the oven is a dish that will capture the hearts of chickpea lovers. This recipe is easy and quick, combining favorite vegetables that will enhance the flavor of the dish, making it not only nutritious and healthy but also ideal for fasting for the whole family.
Our ingredients:
350g chickpeas soaked from the previous day
250g mixed vegetables,
1 large onion, finely chopped
2 cloves of garlic, finely chopped
1 tbsp tomato paste
Salt and pepper
A little olive oil
We start by allowing the chickpeas from the previous day to swell. The next day, we drain and wash them, and then we boil them well (but not until they become mushy).
In a pan, we saute the onion, tomato paste, and garlic, and we add the vegetables to lightly saute. Then, in a baking dish, we place the chickpeas, the vegetables, and a little water from the chickpeas (enough to cover half of the chickpeas with the vegetables). We bake at 180°C until the chickpeas and vegetables are tender and cooked through.
