Let's start with our eggplants. Cut them in half and let them drain. After about half an hour, remove them, drain them well, and pat them dry with an absorbent cloth. Score the flesh of the eggplants in a crisscross pattern, brush them with olive oil, season with salt and pepper, and place them in the oven under the grill to roast.
While they are roasting, let's prepare the sauce. Saute the onion in olive oil, add the garlic, tomato paste, grated tomato, oregano, salt, and pepper. Let it simmer for 10-15 minutes. Then remove the eggplants from the oven and place strips of Vermio cheese in the cuts. Next, pour the sauce over the eggplants and top with a thick layer of grated cheese.
Bake in the oven at 180 degrees Celsius (350 degrees Fahrenheit) until the surface turns golden brown. Serve garnished with finely chopped parsley, grated cheese, and a sprinkle of thyme.
