Ingredients:

3 green bell peppers

3 red bell peppers

3 orange bell peppers

6 tomatoes

2 cups quinoa

3 cans tuna, drained

3-4 fresh onions, finely chopped

1 tbsp vegetable broth

2 dried onions, finely chopped

1 tbsp tomato paste

2 cloves garlic, finely chopped

Olive oil

Salt and pepper

½ bunch dill

½ bunch fennel

Directions

  1. Cut the tops off the bell peppers and remove the seeds.
  2. Take the flesh from the tomatoes and chop it.
  3. In a large pan, saute the onions, then add the tuna, garlic, quinoa, and a little vegetable broth. Next, add half of the chopped tomatoes and allow them to simmer.
  4. Once the liquids have evaporated, remove the pan from the heat, add the herbs, and mix well to combine the ingredients.
  5. Stuff the bell peppers with the mixture.
  6. In a bowl, mix the remaining tomato flesh with olive oil, vegetable broth, and tomato paste.
  7. Pour the mixture over the stuffed peppers.
  8. Place the stuffed peppers in a preheated oven at 180°C (350°F) for approximately 45 minutes.
