GIANTS WITH GREENS

I have some leftover greens from the pie I made. I will prepare a wonderful dish that I have encountered in Ioannina and it is one of my favorites. It is extremely tasty, healthy, and can be consumed during fasting periods.

Here are the ingredients:

  • 300g giant beans
  • 1kg various greens (spinach, dandelion greens, chard, wild greens)
  • 1 medium onion, sliced
  • ½ bunch fresh spring onions, finely chopped
  • 1 leek, sliced
  • ½ bunch dill, finely chopped
  • 1 red Florina pepper (optional), thinly sliced
  • 2 cloves of garlic, sliced
  • Salt, pepper, olive oil

Directions

We have soaked the giant beans in water overnight (at least 15 hours). The next day, we boil the beans, discarding the first water. In the second batch of water, we simmer the beans until they soften.

In a saucepan, we saute the onion and leek. Once they are caramelized, we add the garlic and the Florina pepper.

We add the cooked giant beans along with their liquid and let them simmer for 10 minutes.
