LEMONY GREEN BEANS

Instead of preparing our beloved and delicious green beans in the classic tomato-based sauce, we will make them lemony. This version is lighter but still easy and flavorful, perfect for a tasty lunch accompanied by a slice of bread, and if not fasting, a little feta cheese!

Ingredients:

  • 500g cleaned green beans
  • 2 carrots, sliced
  • 2 potatoes, cut into thick cubes
  • 1 dry onion, finely chopped
  • 4-5 fresh spring onions, finely chopped
  • 2 cloves of garlic, minced
  • Lemon juice
  • Vegetable broth
  • Half a bunch of dill
  • Salt, pepper, bay leaf, olive oil

Directions

  1. In a pot, saute the dry and fresh onions together. Then add the carrots and potatoes. Saute for 2 minutes, and then add the garlic and green beans.
  2. Add enough vegetable broth to cover the ingredients halfway, and let it simmer until the liquid is almost absorbed.
  3. During the final cooking stage, add a little olive oil, lemon juice, and dill. Adjust the seasoning with salt and pepper to taste.

If desired, you can also add fennel or dill weed, which complement the flavor wonderfully. The process remains the same; just slice them thinly and saute them together with the onions at the beginning.
