Our Ingredients:
2 grilled and sliced eggplants
100g Metsovone cheese (or Vermiou or similar Greek smoked cheese)
3 slices of sun-dried tomato, cut into small strips
Some olive oil
Some salt, pepper, and thyme
In a saganaki dish, place the grilled and sliced eggplant at the bottom, scatter the olives and sun-dried tomatoes on top, and add the smoked cheese at the end. Before placing it in the oven, sprinkle thyme on top.
