Ingredients:

  • 1 bunch fresh basil leaves
  • 3 cloves of garlic
  • 30g pine nuts
  • 30g cashews
  • 50g olive oil
  • A squeeze of lemon (optional)
  • ½ cup grated Parmesan cheese (or a mix with Pecorino)
  • Salt and pepper to taste

Directions

In a small pan, toast the pine nuts and broken cashews. (I reserve a small portion of both, coarsely chop them and set them aside to enhance the flavor.)

Take a blender and add all the ingredients except for the Parmesan cheese. Blend the mixture, then add the grated Parmesan (grated at that moment).

  • You can store your pesto in the fridge for a good while, in a jar, topped with olive oil."
