ROASTED POTATOES WITH COLD CUTS AND CHEESES

Here are our ingredients:

  • 1300 grams of parboiled potatoes
  • 100 grams of bacon (approximately 4 slices)
  • 400 grams of assorted cold cuts, cut into small cubes
  • 50 grams of melted butter
  • 150 grams of milk
  • 230 grams of light cream
  • 2 cloves of minced garlic
  • ½ teaspoon of nutmeg
  • ½ teaspoon of smoked paprika
  • 500 grams of assorted grated yellow cheeses

Directions

Let's start with the potatoes. Wash them thoroughly and boil them in salted water for about 15-20 minutes until they are partially cooked (until a toothpick can be inserted but with some resistance). While the potatoes are boiling, grate the cheeses, finely chop the cold cuts and bacon, mince the garlic, and melt the butter. In a small bowl, mix the milk, cream, minced garlic, nutmeg, and smoked paprika.

Once the potatoes are ready, remove them from the water and let them cool for a while. Once they are lukewarm and easy to handle, peel them and cut them into thin slices. Take your baking dish and spread half of the melted butter at the bottom. Layer the dish with a portion of the potatoes, followed by half of the cold cuts and one-third of the grated cheeses. Pour one-third of the milk and cream mixture from the bowl over the layers. Repeat with another layer of potatoes, the remaining half of the cold cuts, another one-third of the grated cheeses, and another one-third of the milk and cream mixture. Finally, add the last layer of potatoes, the remaining grated cheese, and the remaining milk and cream mixture. Pour the remaining melted butter on top.

Cover the baking dish with foil and bake in a preheated oven at 190°C (375°F) for approximately 30 minutes. Then remove the foil and bake for another 15 minutes or until the top gets golden brown. Once it's done, take it out of the oven and let it rest for a while to set.

  • You can use various types of yellow cheeses, and adding smoked cheese and cold cuts will enhance the flavor.
  • Use light versions of cold cuts and cheeses if you prefer.
  • For an extra burst of flavor, consider adding red and green peppers and mushrooms (after sauteing them lightly).
  • Boil the potatoes with their skins on to prevent them from absorbing too much water.
  • The same goes for cooling the potatoes.
  • The measurements are for a round baking dish with a diameter of 28cm (11 inches).
  • If you're hosting a gathering, you can prepare the ingredients in advance (parboiled potatoes, finely chopped cold cuts, grated cheeses, etc.) and assemble and bake the dish on the following day.
