Our Ingredients:
1 kilogram of cleaned and roughly chopped spinach
1 dry onion, finely chopped
2 cloves of garlic, finely chopped
1 bunch of fresh shallots, finely chopped
1 leek, finely chopped
2 carrots, thinly sliced
200-230 grams of Carolina rice
½ bunch of dill
Lemon juice
Salt and pepper
½ cup of olive oil
2 cups of vegetable broth or water
In a pot, saute our onions and leek along with the garlic (the leek adds sweetness and balances the lemon's acidity) in a little olive oil. Add the garlic, carrots, and rice, and saute lightly (sauteing the rice helps to keep it fluffy and enhances the flavors of the vegetables). Add the spinach and mix well. Allow the spinach to wilt and reduce in volume, then add a cup of vegetable broth from the spinach. The pot should have enough liquid as the spinach releases its juices. Reduce the heat and let it simmer for 20-25 minutes. Be careful not to let it dry out. If it does, add another cup of broth or water. Once the cooking time has passed, add the remaining olive oil, lemon juice (according to your desired level of lemony flavor), and dill. Let it come to a boil and then remove it from the heat. Allow it to rest for 10 minutes to absorb the juices.
