Ingredients:
1 kg spinach, cleaned and roughly chopped
1 medium onion, finely chopped
2 cloves of garlic, minced
1 bunch of fresh onions, finely chopped
1 leek, finely chopped
2 carrots, thinly sliced
200-230 g Carolina rice
½ bunch of dill, chopped
2 tomatoes, peeled and deseeded, passed through a grater, or 1 tomato paste
Salt and pepper to taste
½ cup olive oil
2 cups vegetable broth or water
In a pot, saute the onions and leek in a little olive oil. Add the garlic, carrots, rice, and tomato, and saute lightly (sauteing the rice helps it retain its texture and enhances the flavor of the vegetables). Add the spinach and stir.
