Clean and wash the spinach, then roughly chop it. Prepare the squid. Rinse the squid thoroughly and drain it. Cut the squid in half, separating the body from the tentacles. Cut the tentacles in half and chop the rest into small pieces. In a saucepan, saute the onions and dill. Next, add the garlic, squid, and tomato, and let them simmer over low heat for 10-15 minutes. Then add the spinach and let it wilt. Add a cup of warm vegetable broth or water (the liquid should be hot enough to prevent a sudden drop in temperature and shrinkage of the squid). Add the rice, cover the saucepan, and let the dish simmer for 20-25 minutes. Stir the dish occasionally and monitor the liquid level. After 25 minutes, add lemon juice (to taste), finely chopped dill, and the remaining olive oil. If the dish appears dry, add the second cup of liquid, bring it to a boil, and then remove it from the heat, letting the rice absorb all the liquid for about 10 minutes.
