Ingredients:

  • 500g chicken livers
  • 1 dry onion, finely chopped
  • 200g wild American rice
  • 400g chicken broth
  • 4-5 dried figs, finely chopped
  • 3-4 boiled chestnuts, finely chopped
  • 50g pine nuts
  • 3-4 cloves
  • 2 tbsp butter
  • ½ wine glass white wine
  • Olive oil (as needed)
  • Salt and freshly ground pepper
  • Parsley for garnish

Directions

  1. Prepare the chicken livers by thoroughly washing them. Remove the gall bladder carefully to avoid breaking it, and drain any excess blood from the hearts if included. Pat dry with absorbent paper towels and cut into pieces.
  2. Heat a deep saucepan and add a little olive oil. Saute the chicken livers until browned. Add the finely chopped onion and saute lightly before deglazing with white wine. Allow the alcohol to evaporate.
  3. Add the rice to the saucepan, stirring well. Pour in the chicken broth and add the cloves. Cover with a lid and simmer gently. Towards the end, add the chopped figs and chestnuts. When the rice has absorbed most of the liquid, add the butter, cover with the lid, and remove from heat.
  4. Serve the pilafi hot, garnished with finely chopped parsley.
