Beef with Trahana

A wonderful and delicious traditional soup, rich in nutrients, that you will find in every village in Greece. Its flavor will awaken memories of our village and our grandmother. Let's remember it and include it in our menu for our children to taste...


Here are our ingredients:
500g beef (mouse, brisket) cut into pieces
250g star-shaped trahana
2 large onions, finely chopped
Salt and pepper
3 tbsp olive oil
2 tbsp  cow's butter.
Crumbled feta cheese for serving

Directions

Thoroughly wash the beef and cut it into pieces. Place it in a pot with enough water to cover the meat. Leave the lid open and wait for the pieces to boil. Skim off any foam and rinse the meat. Then, place it back in the pot with hot water from the kettle, enough to cover the meat. Close the lid and let it boil for at least 40 minutes.
When the boiling time is up, in another pot, saute the onions in olive oil. Add the trahana and the boiled beef, and mix them together. Then, take some broth with a spoon and add it to the pot. Stir well and reduce the heat. Let it simmer for half an hour. While it simmers, keep in mind to add more liquid if needed. Finally, close your eyes and add salt, pepper, and butter. Stir well and serve with a sprinkle of crumbled feta cheese.
•    You can also add grated carrot and small diced potatoes.
•    If desired, you can add grated tomato as well.
