A nourishing, healthy, and delicious soup that is perfect for the winter. It''s packed with vegetables and fresh ground pepper to warm us up and protect us from the cold. It''s the most common soup during winter and is a staple in every household!
Let''s take a look at our ingredients:
1.5 kg beef (tail, shank, brisket, bone-in cuts) cut into chunks
1 onion, sliced
½ celeriac, diced
4-5 carrots, sliced
2-3 zucchinis, sliced
4-5 potatoes, cut into large cubes
3-4 celery stalks with leaves
Juice of 1 juicy lemon and some zest
½ cup olive oil
Salt, pepper
Place the beef in cold water and once it boils, reduce the heat and let it simmer for at least one hour and fifteen minutes (depending on the cut and the size of the chunks). Skim off any foam that rises to the surface. When the beef is nearly tender, add the vegetables, except for the celery, and let them simmer. Just before the end, add the celery, salt, lemon juice, and a little zest.
Serve the soup in deep bowls, always hot, with plenty of vegetables and freshly ground pepper.
• Try to choose a part of the beef that has bones for more flavor, and the collagen will make the soup thicker.
• If you don''t have bones, ask the butcher for some to boil along with the beef to enhance the taste and make it more delicious.
• If desired, you can add some pasta (orzo, small shells, couscous), rice, or even trahana, which goes very well. Just be careful not to add too much because this soup should have a broth consistency.
