Lazarakia

When I was little, my grandmother Stergoula used to make us Lazarakia every year. I remember it like a dream... she would give them to us in our hands, and as we chewed, we played in the yard. My grandmother, you see, came from Kalymnos. In Kalymnos, as far as I remember my grandmother telling me, children sing the Lazarus carols as they go around the neighborhoods, and the housewives give kisses and tips. Back then, on the island's lordship, my grandmother, who worked as a cook, used to make little rolls, or eggs, and generally ingredients they had at home for preparing for Holy Week.
So, Lazarakia are stuffed. Everyone puts in whatever they have. A few walnuts, a few almonds, a few raisins... and more. That's why, because the filling is sweet, our dough is balanced to be sweet... just right. Personally, I really like to put in pieces of spoon sweets (orange, fig, etc.) or even jams. The shape of Lazarakia is characteristic, as we put the scarf Lazarus had on his head and crossed arms. For eyes, 2 cloves. This dough of ours, being fasting, is quite easy and you can use it generally to make stuffed with healthy products and give them to the children.

Our Ingredients
150g vegetable oil
240g sugar
360g warm water
900g soft flour (may need a little more)
A pinch of salt
15g dry yeast
1 tsp powdered mastic gum from Chios
? tsp cinnamon powder
For the filling
Walnuts, almonds, raisins, cognac, a little cinnamon, a little ground cloves.

Seskoula Cigars with Eggs and Feta

I have made dolmades with seskoula, and since I used the large leaves for that, I will make crispy cigars with the tender and small leaves. It is a traditional dish that I have seen all over Greece, made with various types of greens, each giving the dish its regional character.

The best approach is to find different greens that will blend their flavors and bring out their deliciousness. When I visited Pelion, I discovered this wonderful dish at Kritsa Gastronomy made with their own fresh greens from the Karaiskou farm. In my village, they make it with their own greens using local names (megounides, neroulides, skatzakia, etc.).

In beloved Crete, with its fantastic mountain greens, where of course stamnagathi is never missing, it imparts a unique flavor. In Macedonia, rich in greens, I have encountered this dish made with local greens and spices (such as savory, etc.).

At this point, it is worth mentioning that we need to be familiar with the taste of each green in order to give our food or pie the desired character.

Sweet Greens: vrubes, zochi, tsouknides, vlita, seskoula, spinach, kafkalithres, etc. Sour Greens: glistrides, xinolapatha, ampelovlastara, etc. Spicy Greens: roka, black vrubes, etc. Bitter Greens: radishes, antidia, pikralides, etc. Aromatic Greens: dill, fennel, mint, oregano, fresh rigani, parsley, etc.

St. Fanourios Cake

St. Fanourios Cake


On the eve of St. Fanourios Day (August 27th), we make Fanouropita, a special cake. According to tradition, we make Fanouropita for the mother of St. Fanourios, who was a sinner. She tried to help her son but her bad character prevented it.
After his mother passed away, St. Fanourios asked the villagers to make a cake for his mother's soul to seek forgiveness for her sins. Therefore, housewives share the cake with the neighborhood, and they pray, "May God forgive the mother of St. Fanourios."
St. Fanourios is also known for revealing lost objects to the faithful and for revealing the future husband of young women.
The ingredients used to make the cake should be 7 or 9 (or more, depending on the spices you want to add to your cake), symbolizing the church's mysteries, the days of creation, and the orders of the angels.
When making the cake, it's customary to have a lit candle or lamp in the room.

Carbonara

A highly discussed dish... carbonara originated from northern Italy, where poor farmers used simple and, above all, economical ingredients to make their pasta. They had an abundance of pasta, eggs, cured meat, and cheese. The economical meat they used (instead of the bacon commonly used here) is pancetta, which is obtained from the pork belly (the same part used to make bacon, but it is not smoked). They also used guanciale, which is the cheek of the pig, equally fatty like pancetta and also unsmoked. However, since we may have to search for places that provide guanciale, we will adapt and make our carbonara with readily available ingredients such as smoked pork or bacon. We'll prepare it in just 10 minutes and enjoy it!

500g spaghetti or linguine or tagliatelle
1 tbsp unsalted butter
200g smoked pork or bacon or pancetta (if guanciale is not available), sliced into thin strips
100g Parmesan cheese
100g pecorino cheese
5 egg yolks
