One of the primary products produced by my region (Kymi) is goat cheese. We find it in a great variety, from soft fresh to hard mature ones.
Our richly vegetated mountains along with the fresh sea breeze result in this wonderful cheese with its full flavor and distinctive aroma.
Our ingredients:
1/2 kilo soft goat cheese
3-4 tablespoons of fresh thyme, sage, savory, and oregano
100 g almonds and walnuts, crushed
1 glass of dry red wine
1 pack of cherry tomatoes
(optionally a little fresh milk in case the cheese is not soft enough)
The traditional Kimi kourabiedes with their distinctive finger-like shape, as they have been made by generations of housewives from Kythnos. The recipe is passed down from grandmother to granddaughter.
Ingredients:
½ kilogram powdered sugar
250 grams butter (fresh, from Epirus, Corfu, etc.)
200 grams granulated sugar
250 grams coarse chopped and toasted almonds
3 vanilla pods + 1 in the powdered sugar (capsules)
1 kilogram all-purpose flour
A little rosewater
A classic sweet treat that can be found in Kimi. It can be served on joyous occasions or offered as a treat. During my visit to Stavroula, she taught me a lot about this sweet delight. With a cup of coffee and stories, we made wonderful Karydata of Kimi, which we served as a treat for birthdays, impressing both the old and the new! The process is not difficult at all... I would say it is more time-consuming due to the technique of shaping the cookies, which resemble little stars. Let's see the steps.
