Cretan Herb Pies

Delicious and flavorful herb pies for our meze, appetizers, for kids, school, office, and wherever your imagination takes you. The herbs we use depend on our taste, the season, and the region. We categorize them into 5 groups:


Sweet Herbs: dandelions, wild fennel, wild chicory, vleeta (mallow), seskoula (nettle), spinach, amaranth leaves

Sour Herbs: sorrel, sourpusses, wild grape leaves

Spicy Herbs: arugula, black dandelions

Bitter Herbs: radishes, endives, chicory

Aromatic Herbs: dill, fennel, mint, fresh oregano, parsley, etc.


To create a balanced flavor for the herb pies, you should use:

50% mixture of sweet herbs

20% aromatic herbs

10% from a special category (sour, bitter, or spicy)

20% onion, fresh green onions, leeks


Our Ingredients
For the Filling: 1 – 1 ½ kg of your chosen herbs ½ cup of olive oil 1 finely chopped onion ½ finely chopped leek A bit of mint Salt, pepper
For the Dough: (For 20-25 small pies) 1 ½ cups of all-purpose flour 1 shot of olive oil ½ tsp salt 1 shot of tsikoudia (Cretan spirit) Water, as needed to form a dough that doesn't stick to your hands.

Flour pie

Many years ago, I used to work in a hotel in Katerini. There I met a lady who made this flour pie. I used to make it often since it became my son's favorite. It's very easy, fast, you can make it in 2 minutes, with 4 ingredients that we all have in our kitchen, and the whole family can enjoy it.

Ingredients:

400 g all-purpose flour

2 eggs

400 g crumbled feta cheese

1 cup water (approximately)

50 g butter

Salt, pepper, oregano

Oatcakes or Oatmeal Pies

The scale went up... and now what do we do? How can we get our bodies back into those nice little outfits we have in our closet? Oatcakes are the solution... rich in protein, low in fat, and packed with nutritious fiber. And if my oat flakes are organic... gluten-free, it's a joy for me! I'll make plenty to have in the fridge since they keep for a few days, and they are the easiest alternative to bread. I'll enjoy them with sweet or savory combinations!

Lemon pie

Lemon pie is a dessert that is hard to resist. With its refreshing flavor, aromatic lemon, and light texture, it is the perfect choice for a delightful sweet indulgence.

In the following recipe, you will find all the steps to make a lemon pie that will impress you. This version is light and airy, filled with the freshness of lemons.

Let's get started and enjoy this delicious culinary adventure together!

Ingredients:

For the crust (for a 27cm pie dish):

  • 170g all-purpose flour
  • 100g cold butter (cut into small cubes)
  • 1 tbsp powdered sugar
  • A pinch of salt
  • 1 vanilla pod
  • 1 tbsp cold water

Take all the ingredients and mix them in a bowl. The dough will initially be crumbly and dry. As you work it with your hands, it will gradually come together into a smooth dough. Roll out the dough and place it in the pie dish. Press it down and prick it with a fork. Chill the crust in the refrigerator for about half an hour.

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) on the bake setting.

Take a piece of parchment paper, place it over the crust, and add pie weights (such as rice or beans) to weigh it down. Bake the crust for about 25 to 30 minutes. Remove the parchment paper and weights (you can save them for future use) and continue baking for an additional 20 minutes or until golden brown.

For the filling:

  • 80g lemon juice
  • Zest from one lemon
  • 100g sugar
  • 150g eggs (about 3 medium-sized eggs)
  • 1 vanilla pod
  • 70g butter
  • 20g cornstarch
  • 4 gelatin sheets

Combine all the ingredients in a saucepan and mix them over medium heat until well incorporated and the mixture thickens. Remove from heat and set aside.

For the meringue topping:

  • 4 egg whites
  • A pinch of salt
  • A few drops of lemon juice
  • 250g powdered sugar
  • 1 tsp cornstarch

Macaroni Pie

An easy recipe that is beloved by the family... especially the kids. It's a recipe that allows the homemaker to use whatever she has in her refrigerator. Nowadays, making the most of every ingredient in our fridge is essential. Wasting and discarding ingredients just because we let them go bad is not an excuse. Leftover chicken from the previous day, cold cuts, cheeses, sausages, vegetables, and anything that comes to mind and sparks your imagination. A very delicious dish that one piece is never enough!

Our Ingredients:
1 pack of phyllo pastry sheets
400g milk
300g mixed grated cheeses
200g mixed vegetables
200g ham or turkey, finely chopped
1 egg
½ cup pasta
Salt, pepper,
a little vegetable oil with some butter for brushing the phyllo sheets.

Dad arrived from the village loaded with greens... wonderfully fresh wild greens... he refers to them by various local names which, unfortunately, I can't find a way to write otherwise. As examples, he mentions greens such as "skatzakia," "megkounides," "neroulides," etc.
Fortunately, he also brought wild chicory, wild fennel, a few sorrels, a few wild leeks, which I can recognize, as well as fresh spinach and fresh chives from the garden, dill, etc.
The best part is for a richly flavored, fragrant, delightful countryside greens pie that will make the whole neighborhood smell amazing!


Our Ingredients:
• 1 portion of phyllo dough for pies or ready-made country-style phyllo dough
• 1 kilogram of washed and well-drained spinach
• 1 kilogram of assorted wild greens
• 2 leeks (only the white part) finely chopped
• ½ bunch of fresh chives finely chopped
• 1 dry onion finely chopped
• ½ bunch of dill finely chopped
• 300g of crumbled hard feta cheese
• ½ cup of trahana (a type of wheat product)
• 3 eggs
• 1 cup of mixed olive oil, melted butter, and vegetable oil
• Salt – pepper – sesame seeds

950 grams all-purpose flour

Gardener's Lenten Pie

An easy, delicious pie with plenty of nutritious ingredients that even big and small children who struggle with eating vegetables will love! It's light, low in calories, and allows for individual creativity in choosing the ingredients.

Just like the gardener's soup, where we use whatever vegetables we have in the refrigerator, the same logic applies here. We use leftover vegetables. For this specific pie, for a 32cm baking dish, I've used as many vegetables as would be enough to create a satisfying pie once they shrink during sauteing. Keep in mind that the vegetables lose about two-thirds of their volume during sauteing.

For the filling, you will need:

  • 2 grated carrots
  • 200g sliced mushrooms
  • 2 finely chopped leeks
  • 1 finely chopped green bell pepper
  • 1 finely chopped red bell pepper
  • 1 large finely chopped dry onion
  • 3-4 finely chopped fresh spring onions
  • 1/4 of a sweet, fluffy cabbage, finely chopped
  • 60-80g bulgur (to absorb excess moisture)
  • half a bunch of dill
  • salt, pepper, and olive oil

For the dough, I used:

  • 300g soft wheat flour
  • 150g water
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
